The wine (from the Latin vinum) is a drink obtained from the grape (species Vitis vinifera), by the alcoholic fermentation of its must or juice.2 Fermentation is produced by the metabolic action of yeasts, which transform the sugars of the fruit into ethanol and gas in the form of carbon dioxide. The sugar and acids that fruit possesses, Vitis vinífera, are sufficient for the development of fermentation.
